The A361 west from here is the main road across North Devon, zooming across some impressive scenery to Barnstaple on the west coast. From there you can take the A39 "Atlantic Highway" into Cornwall. Or, if you want to get somewhere in a timely fashion, stay on the M5. It's much quicker.
